My Attempt at a No-Bake Cheesecake

I tried my hand at cooking recently, with several recipes that I found online that would qualify as easy. However, it turns out that what I think is an easy no-bake recipe turns out to be more challenging than the video demo shows it will be. Their video made it look so simple and easy, I thought an inexperienced cook like me could do it!

I found the recipe on Yummy Magazine’s website. I was looking for easy no-bake recipes for desserts and found this. It said that their No Bake Oreo Cheesecake was “quick and easy” so I thought, why not give it a shot? It can’t be too hard! Or could it?


Ingredients

2 cups crushed Oreos
4 tablespoons of melted butter
227g cream cheese, softened
1 cup all-purpose cream
1 teaspoon vanilla extract
2 tablespoons cocoa power
2 tablespoons unflavored gelatin
1/4 cup hot water

Instructions

Combine the Oreos with the butter and press into the bottom of an 8X8 inch pan and chill to set.

Mix together the cream cheese, all-purpose cream, vanilla extract, and cocoa powder. Dissolve the gelatin in the hot water and add this to the mixture.

Pour the cream cheese mix on top of the prepared crust and sprinkle with Oreo crumbs. Let it chill for 3 hours then slice into squares to serve.


OK, so I didn’t follow the original instructions completely because I did not have an 8X8 inch pan. I put the crust in a pan but I don’t think it was the right size. The pan I had was probably a bit wider so there seemed to be too little crust at the bottom so I crushed some more Oreos for the crust -- I think everything else went downhill from there.

I guess the mistake was not proportioning the butter with the additional crushed Oreos. Because of that the crust didn’t set properly and was crumbling when we sliced it. Plus, I didn’t use a nonstick pan, which made the already crumbly cheesecake difficult to remove.

My next mistake? Not waiting longer for the cheesecake to set. The original instructions said to let it set for three hours…I don’t think we waited that long and the cheesecake ended up a bit gooey. When we served half of it the next day, however, it set a little more and looked more like a cheesecake in the middle than when we originally served it. Another thing to consider was that our refrigerator was full (it was the holidays after all). I guess the temperature wasn’t cool enough because there was too much food inside to set the cheesecake properly.

The last major mistake was the Oreo topping. I think I was only supposed to put on a thin layer. There were too many crumbs on top and it kept falling all over the place when we sliced it. The pan I used was so deep I didn’t realize that I had too many crumbs on top until it came time to serve it and it was all too late.

The cheesecake served (as you can see in my photo) was such a mess! Was I supposed to butter the crumbs on top too? I have no idea! Whoever said that you can never have too much of anything would be so wrong when it came to putting Oreo crumbs as topping on a cheesecake.

The only consolation I had about the whole cheesecake thing was that everyone thought that it tasted good. The family seemed impressed that I could make something that tastes good (this was the first recipe I tried over the holiday).

As for me, I was a little disappointed with myself. I mean, who can mess up a no-bake recipe? Something that was labeled as quick and easy? Honestly, I was overwhelmed with all the work and the mess I made!

Note to self: just because it says no-bake, it does not mean that you can do it.

Note to Yummy Magazine: please do not label it as quick and easy until you have someone like me try it. That cheesecake, as yummy (pun intended) as it was, was neither quick nor easy for me.
